This a.m., we had plans with friends to go to this new restaurant that fort collins got called Snooze a.m. eatery. it was FANTASTIC. t had corned beef hash, egg whites and a good lookin sourdough toast. i had a barbacoa beef benedict. it was amazing. instead of an english muffin, they had it on masa...black beans, barbacoa, poached eggs and some cojita cheese sprinkled on top. it was amazing. i don't have pictures...i wish i did, however, i'm going there again later in the week, so i'll snap some then!
then we came home to clean. we have some very exciting visitors coming this week. a family of friends, coming from MN to visit. We are not-so-secretly scheming to have them move out here. just so happens, t has a work retreat in Beaver Creek this weekend too. We are lucky enough to have very flexible friends that just so happen to want to spend some time there as well! They are coming there with us to see "real" mountains! Again....more pictures will be coming.
we got to babysit our great niece, k. she is adorable and was so easy to watch....she babbles to herself most of the time, being totally entertained. not to mention she is just beautiful.
we just got home and made dinner. t had some all-natural chicken brats on the grill. I made a wrap with a 100 calorie whole wheat tortilla. it was so big, I couldn't close the thing. i filled it with grilled eggplant, grilled zucchini, grilled tofu, spinach, and roasted red pepper hummus. Seriously it was bigger than my head.
what a day, what a weekend! the perfect match to start out my busy week. i have my physical therapy tomorrow, along with my interview, some work thrown in there! we're good to go!

oh what a great weekend! i can see why people want to come visit you....the mountains right now must be beautiful-still miss my beloved colorado! good luck with your follow up interview :)
