weekend recap


this weekend was just weird. it was the most active and non-active weekend i've ever had....all in one.  friday night, i worked out HARD.  i came home and even though it was boiling, i decided to bake a pie and make energy bars.  it was rhubarb from the CSA share that was supplemented with others from the store.  i added a tad too much cinnamon, and I think the rhubarb was on it's last leg as far as the lateness in the season, so it ended up like apple pie. 

we did a bike ride/skate early in the a.m. on saturday, then went to work out later in the day, after a nap taken, by me.  i'll let you know that i'm not a big napper,but this weekend, i couldn't get enough.  i literally think i could have slept throughout the whole thing. we went out for my mom's birthday (we got her a kindle) that night.  BBQ chicken for me and pulled pork sandwich for t!  no pictures, because well...BBQ isn't very attractive. 

sunday a.m., we were up early again to go watch my little cousin ride in a race.  this kid is seriously one of my favorites.  i feel a connection to him unlike any other.  i think it stems from me watching him while his mom was on a mission trip when he was about 2 years old.  i cannot help looking at him and seeing him in his car seat or swimming at the pool with his floaties on calling me "sweetiepie".  now, he's 17 and a fantastic bicyclist and he just makes me happy. 

i took ANOTHER nap when i got home.  and then laid lethargically on the couch for the rest of the night.  i didn't have anything left in me at all.  i don't know why and again today...still the same.  but, i got it together enough to grill some chicken brats for t and make some roasted beets and corn on the cob for me. 
these beets are from two weeks worth of the CSA.  aren't they amazing looking???  i roasted them with basil, oil, and balsalmic vinegar.

Wow. You were busy! I'd have to rest a week to make up for that.

I did beets this week too, but only shredded them. Planned to have them in salad, but now i'm wondering if they would go into a bread, like carrot cake or something. Will have to get creative. :)

Hope you catch up on rest soon.

hey... never had roasted beets.. hmm. I used to eat beets i dunno if they were from a can or what. And put mayo on them. Thinking abt it now it's just gross. but that's how we ate them. eck.

Anyway -- what is up with the date field on your template -- it comes out as undefined and I can't figure out when you wrote the post!!!

i don't know what's up with the date thing and in fact, i had no idea what was supposed to go there until you said that. i like the look of the new format, but it's a little crazy/cluttered for me. so...i just left this one til i could find a new one!
